Broccoli & tofu casserole




I love broccoli, it is by far my most favorite green food. This is a super yummy and quick weeknight meal to make. I used the left over rice in the fridge from the night before. You could totally cook a fresh pot though. I made my own white sauce out of celery,onion and garlic. Pour that on top with some fresh bread crumbs drizzled with butter....you can't go wrong. Serve it with a big salad and dinner is made!



Broccoli & Tofu casserole


1 cup of rice-cooked (optional )
1 tbsp sunflower oil
1/2 block of tofu-cubed
1/4 tsp curry powder
1/4 tsp garlic powder
1/4 tsp sea salt
1 head of broccoli 

2 tbsp earth balance + 1 tbsp
1 celery stalk- minced
1/4 onion-minced
1 garlic clove minced
1/4 cup flour
1 1/2 cups soy milk
1 tbsp tamari


Preheat oven to 375
Spread rice on bottom of a round cake pan


Heat oil in saute pan, add tofu and season with curry, garlic and salt.
Fry until golden. Spread on top of rice.
In the same pan, add broccoli and 1/2 cup water. Cook just until broccoli turns bright green.


In a small pot melt butter. Add celery, onion and garlic. Saute until soft.
Add flour. Stir until absorbed. Slowly add milk and stir on medium heat until thickens.
Season with tamari.


Pour white sauce over top of broccoli and tofu.
Melt remaining butter and pour over bread crumbs.
Mix up, and sprinkle on top of casserole.


Bake for 25 minutes

  1. Casseroles are so great! They're easy to make, reheat, and clean up after. Doesn't hurt that it's hard to go wrong, either.
    I love broccoli too and it's so nice and bright in yours here!
